Leaps of Faith, Low Carb Conversations, and Almost Vegan Mostly Paleo Chocolate Chip Coconut Maple Bacon Macadamia Cookies

Hard to believe that this week is actually coming to a close. I’m sorry I had to miss a second week of Trigger HAPPY Thursdays, but if you happened to stop by the blog on Tuesday, you’ll know that I announced the launch of the Finding Our Hunger podcast, which was a big, scary, beautiful leap of faith that I took with my good friend, Ito (otherwise known as the Overachieving Liar).

I can’t tell you how much I love speaking with Dietitian Cassie–and her guest host Kevin & my co-guest-friend Hadass were absolutely a pleasure. We delve into some seriously deep issues around food, mental health, and wellness on this episode, so I highly, highly suggest you check it out.

Anywho, I’m in the middle of a huge freelance project and getting ready to fly to Austin, Texas for the incredibly amazing Paleo FX conference next week (which I can’t wait to tell you all about), so I’m going to get back to writing, packing, and planning for all of the amazingness that this upcoming week will hold. Almost Vegan Mostly Paleo Chocolate Chip Coconut Maple Bacon Macadamia Cookies
(not *quite* low carb, but the only added sweeteners are in the maple syrup and chocolate chips. I’m staying away from added sugars right now because I’m trying to reset my hormones, and added insulin is a no-no, but my mom’s Crossfit friends get the benefit of taste-testing!)
I originally made these cookies when I was a vegan cookie baker (kpcookies.wordpress.com), but I’ve adapted them for the Paleo crowd. Because who doesn’t love bacon in a cookie? (The basic cookie was inspired by George Bryant at Civilized Caveman Cooking.)

1 c Coconut Flour

1/2 c Melted Coconut OIl

1/2 c Maple Syrup

4 Flax Eggs (1 tbsp Flax +3 tbsp hot water per “egg”)

1 Tbsp Vanilla Extract

1/4 tsp Cinnamon

1/4 tsp Sea Salt

1 c Macadamia Nuts, ground into butter

5 thick strips of bacon, cooked in an oven at 400 until crispy

1 C Dairy & soy free chocolate chips like Enjoy Life brand

Roll into 1 tbsp balls and flatten on a greased cookie sheet. Bake at 350 for approximately 12 minutes (until the bottoms are just beginning to brown).
