Hard to believe that this week is actually coming to a close. I’m sorry I had to miss a second week of Trigger HAPPY Thursdays, but if you happened to stop by the blog on Tuesday, you’ll know that I announced the launch of the Finding Our Hunger podcast, which was a big, scary, beautiful leap of faith that I took with my good friend, Ito (otherwise known as the Overachieving Liar).

Anywho, I’m in the middle of a huge freelance project and getting ready to fly to Austin, Texas for the incredibly amazing Paleo FX conference next week (which I can’t wait to tell you all about), so I’m going to get back to writing, packing, and planning for all of the amazingness that this upcoming week will hold. I’ll leave you with the recipe I discussed on the Low Carb Conversations podcast, if you’re interested in making a ridiculously amazing almost vegan, mostly paleo treat. 🙂

1 c Coconut Flour
1/2 c Melted Coconut OIl
1/2 c Maple Syrup
4 Flax Eggs (1 tbsp Flax +3 tbsp hot water per “egg”)
1 Tbsp Vanilla Extract
1/4 tsp Cinnamon
1/4 tsp Sea Salt
1 c Macadamia Nuts, ground into butter
5 thick strips of bacon, cooked in an oven at 400 until crispy
1 C Dairy & soy free chocolate chips like Enjoy Life brand
Roll into 1 tbsp balls and flatten on a greased cookie sheet. Bake at 350 for approximately 12 minutes (until the bottoms are just beginning to brown).
